WILY CHILLI CHICKEN

This is a an easy and fast dish to make. The leftovers (if any) can be used in other recipes!!

These are the approximate measurements. I adjust the recipe depending on whom I am cooking for. Mild for kids and hot for adults.

3 - 4 boneless skinless chicken breasts, cut inot cubes.
3 tbsp vinegar
1 tbsp chilli sauce (use cayenne pepper sauce or Louisiana hot sauce or any other you prefer)
1 tbsp cornflour
oil for stir frying (use extra virgin olive oil for a healthier version)
1tsp each of crushed garlic and ginger
4-5 green chillies (jalapenoes work well too)
Salt (optional)

Apply all the ingredients except oil to the chicken and mix well. Leave to marinate for 5-15 minutes. Heat oil and fry the chicken until it is cooked. If while cooking the chicken becomes dry try adding a little water.

I cook the chicken in two batches. The first one is mild. Add the peppers to the second batch for a nice spicy taste.

Serve this with baked french fries or salad.

Use the leftover chicken to make a healthy Wily Chilli Chicken Wrap for school or office lunch.

Use whole wheat tortilla , top it with romaine lettuce, tomatoes, the chicken, shredded cheese and any other vegetable like carrots, celery etc and light ranch dressing. Roll into a wrap sandwich. Serve this with baked chips or fresh fruit.
